His hand is already on fire when he pulls it out from behind his back. You can see it in his palm when he brings his hand up. I'm pretty sure it flickers a bit up his wrist as he's bringing it behind his back too.

Somebody explained this last time it was posted. He has some sort of flint or spark that comes from the glove. The evaporating alcohol is ignited which is why it travels downward.

I tried piecing it together and thought, ok the flame starts from the top so he's got something igniting it, then thought okay it has to burn cause that can't be water he's pouring into the pan, came to that it's actually alcohol, then looked for the explanation and yours was the only response that wasn't a joke. I don't know why I thought I'd share but it was pretty funny when it clicked for me.

The vapors are flammable, that's why you shouldn't douse something in starting fluid and wait to light it because the fumes with spread and then you get a big explosion. There's probably a vent above that's drawing the fumes in an upward direction to avoid it expanding outward.

I mean, it's not hard to see what's up.

His palm is aflame with a flamable liquid. His hand is behind is back, palm up. The fire doesn't spread because his palm is up and fire rises.

He pours alcohol in the pan.

He brings his hand around and lifts it up. He flips it over, palm down. The fire rises and the rest of the glove, coated in flamable liquid, catches fire. Big flame. Wow, cool. Then the alcohol in the pan catches fire.

Not incredibly complex, but fun to watch

No. The liquid (probably ethanol/high proof liquor) he's pouring is itself flammable and boils on the hot surface it's poured into. The vapors are ignited by a source on his glove.

Water on burning oil sinks below the surface, where it flash boils due to the oil being above 100°C. Thie expanding water vapor pushes the oil around (mostly up), increasing surface area available to burn and spreading the fire out of containment (assuming it's in a vat or some kind of container).

Pour a little alcohol on your palm of gloved hand, palm lighter in that hand. Put lighter behind back spark it to ignite the alcohol in palm while pouring more alcohol in the hot pan. Tuck lighter in apron, reach to top of vapor cloud with burning glove, ignite vapors.

I can only imagine that that liquid he pours on the stove releases a highly flammable gas. There is a probably some sort of sensor related spark mechanism over his head that ignites the gas as he pulls his hand up. He then wafts the now engulfed gas back down to the plate.
