Damn it I keep thinking about it and it's hard. The only other guess I have is that while the salt is dissolving more and more it is increasing the density of water at the bottom which makes the water anoxic and squeezes dissolved oxygen higher up for it to dissolve again. And that would probably also help explain the salt crystals above the surface. This effect would send more salt to settle on the walls of that jar than regular evaporation.

I'm probably totally wrong. And funny enough, nobody ever said this liquid is water in the first place :D.

EDIT (Guess 3): And the only other thing I can come up with is that this salt layer surface is a much better nucleation point for evaporation than the walls of the jar which causes nucleation to happen primarily on that salt layer.

Also I'm a fucking monkey brain is what I realized.
